So, I only made it 2 weeks of consistent menu planning before falling off the wagon. Not my best work, I'll admit, but... but... but... it's summer! I want to get better at this for the sake of my family and so we can avoid eating cereal for dinner most nights, even though I secretly really love doing that ;)
This week I'm *kind of* back on track. I did plan meals, but only had to plan for a few nights since we're headed to the beach again tomorrow!!!!!!! for our last little long weekend jaunt before Audrey starts kindergarten next week. Wowzer, that's coming up fast.
So, here's the plan for this week:
Monday: Slow Cooker Chicken Quinoa Chili
DELISH! healthy.yummy.easy. Perfect weeknight meal - I'll be making this again. Tastes better with sour cream and shredded cheese... and a little Tabasco ;) Jalapenos and avocado would be great, too.
Tuesday: Roasted veggie, mozzarella, pesto sandwiches (my own creation!) with warm German potato salad and my famous pasta salad!
My pasta salad = tri-color veggie rotini pasta, 1/4 cup light italian dressing, cup of crumbled reduced fat feta, 1/2 cup chopped green pepper, 1/2 cup chopped orange pepper, 1/2 cup diced tomato, 1/4 cup chopped green onion - mix - season with salt and pepper
Wednesday: leftovers for the family - out to dinner with a friend for me ;)
Thursday: Audrey has a teacher meet/greet and welcome back picnic at her new school! I'll pack leftover pasta salad, easy sandwiches, and fruit for dinner.
Friday - Saturday - BEACH
Sunday: We'll be back home this night so I think I'll whip up some quick, easy, and yummy - pasta always does the trick for me - I'm thinking the Pioneer Woman's Cajun Chicken Pasta
The following week (starting 8/26), we'll be back to a more 'normal' schedule so I hope to get on track with menu planning then. If I were really on top of things, I'd prefer to menu plan breakfasts and lunches also, but... one step at a time, my friends!
Any yummy recipes I should add to my next menu plan?! I especially love recipes that are one-pot or crock pot style ;)
